- Chill everything. Glasses, fruit, and water should be very cold. Carbonation lasts longer when cold, and bubbles last longer.
- Add sparkling water last. Muddle the fruit and herbs first; add the bubbles just before serving to avoid losing effervescence.
- Less sugar, more fruit. Let ripe fruit do the sweet work. A touch of homemade syrup or honey is enough.

1. Watermelon and mint
The most summery mocktail. Blend a couple of watermelon cubes, strain if you want a cleaner texture, and pour over ice. Add a few lightly pressed mint leaves, a splash of lime, and top with very cold sparkling water. Refreshing, sweet, and with an irresistible color.
2. Virgin Mojito
The classic that never fails. In a tall glass, muddle half a lime cut into wedges with a handful of spearmint leaves and a teaspoon of syrup. Fill with crushed ice and top with sparkling water. Tart, herbal, and full of bubbles.
3. Blood orange and rosemary
For a more "signature" version. Mix blood orange juice (if in season) with a lightly crushed rosemary sprig to release its aroma. Serve with ice and sparkling water. The citrus-herbal contrast is elegant and not overly sweet.
4. Strawberry and basil
Muddle three or four ripe strawberries with two basil leaves and a few drops of lemon. Strain, serve over ice, and finish with bubbles. Sweet, fresh, and with that surprising touch of basil.
5. Cucumber, lime, and ginger
The most "detox" and digestive. A few thin slices of cucumber, the juice of half a lime, and a touch of grated fresh ginger. Let sit for five minutes, strain, and top with sparkling water. Light, green, and very refreshing for the hottest hours.
6. Pomegranate and fruit tonic
Pour pomegranate juice (or some crushed fresh seeds) over ice, add an orange slice, and top with plenty of sparkling water. A deep red and a hint of tartness make it ideal for a non-alcoholic toast at dinner.
7. Peach and thyme
The most aromatic. Blend half a ripe peach, add it to the glass with a sprig of thyme and ice, and top with bubbles. Thyme provides a Mediterranean background that combines wonderfully with the sweetness of the peach.
